Our Cellar is divided into two areas :

The first area where the Calvados and Pommeau are matured is located in an old building in the regional style, using Caen stones .
The use of oak casks from Limousin (central part of France suppliers to Bordeaux wine makers) with a capacity of 400 litres ensure that our Calvados mature beautifully. The casks are classified according to their age.
Our Pommeau, on the other hand , rests for long months in large oak farm barrels each containing between 1500 and 2500 litres.

The second area which is dedicated to the processing of juice holds vertical 150hl stainless steel tanks as found in any winery. They serve to both develop and store our ciders.
To ensure optimum preservation, the cellar is maintained at a constant temperature of 10° C
