Our orchard was planted in 1982 on a limestone and clay soil resting on a jurassic limestone subsoil. The nine hectars which comprise the orchard include 15 varieties of apple.
When we planted
the orchard we took into account the proportions found in ancient apple
orchards:
70% bitter sweet apples
15% bitter apples
15% sour apples
